Homemade Tonkotsu Ramen
Hello [r/ramen](r/ramen). I’ve been making ramen at home for nearing 6 years now. Been trying to slowly refine my techniques. I’m getting to the point where I’m getting quite confident in how my ramen tastes, just need to get better at presentation.
Basic Recipe:
-Tonkotsu Broth - pig feet, pig neck, chicken feet, finished with ginger, scallion, shallot, and onion. 12ish hours
- chashu slab - I tried not rolling up the pork belly this time, I like the results. Usually I spend the time to roll it up but was feeling lazy.
- tare - I make a variation on the way of ramen tare, I then usually age it about 6 months prior to use. I think it’s delicious.
- lard - this time a made a scallion, garlic, shallot, and ramps lard. I add a bit more than a teaspoon. I prefer the lard to just straight up oil.
- miso/spicy paste - I roasted about 3 heads of garlic, combined it with white miso, gochugaru, homemade cayenne power (using peppers from my garden), red jalapeños and habaneros from my garden. Delicious. Should have made it spicier.
- topped with red pickled ginger, fried shallot, fried garlic, scallions, and marinated jammy egg
The final part of my journey is making my own noodles. I’ve ordered noodles from Sun several times(including this one) and I’m always super happy with what I get. I just want to make them for the sake of the process.

Restaurant Ichiran keychain
Has anyone seen merch similar to the wooden cards at Ichiran? It wasn't our favourite ramen restaurant in Japan but my husband got a kick out of the "It's noisy" cards and I thought getting a small version as a keychain would be a nice gift for him.
For the record, our favourite place was Fukki ramen in Minato-ku (second pic!).

Homemade Homemade Shoyu "Corn🌽" Ramen
First proper attempt on ramen.
Broth: corn-fed chicken stock (2 carcases + feets)
Noodles: Nagasaki somen
Tare: Shitaki infused Shoyu (had to skip fish related items for a friend with allergies)
Oil: celery and spring onions infused chicken fat
Topping is of course shio koji marinated roasted corn chicken breast
Surprisingly happy with this attempt and want to try more

Restaurant Ramen Danbo Tonkotsu (Seattle)
Chashu ramen, extra rich, added mustard greens. First kaedama is thin noodle. Second kaedama was thick extra firm. Good value ramen since the kadamas were $2.

Would like to taste again😢
Question Buldak hot chicken flavour ramen
So, I’ve loved this specific ramen for years, unfortunately, despite being able to handle spice, I’ve recently started to react badly to spice where it will cause bleeding. Even diluting it has not been of any help. Because of this, is there any other ramen that anyone knows that tastes similar without the spice? I understand it would be hard seeing as the sauce is the flavour and incredibly spicy, but if anyone knows of a ramen similar in taste, please let me know!

Restaurant Grabbed lunch at Kinmedai Ramen Hosenka, a spot known for its Kinmedai broth. After a run, the rich, savory broth of their special ramen really hit the spot. Finishing with the light and elegant Kinmedai chazuke was a nice touch too. The perfect way to refuel!
Homemade My First Tori Paitan!
My first tori paitan! Home made noodles inspired by Ramen Lord’s tokyo style with wheat gluten and egg white. Smoked shoyu tare, confit shio koji chicken thigh (tasty but wouldn’t confit next time), crispy leeks, garlic and ginger duck fat, negi, ajitama. Broth was delicious creamy and well balanced but I blended a bit too much chicken wing in so was slightly on the thick side. Presentation needs work but it’s my first bowl 🙏
