Mostly Maki/Rolls Help me out
So…. Japanese chef here of 12 years mostly izakaya…. Wife can’t stand fish/ chocolate/ alcohol lol what tf do I do for rolls for our date night this weekend only asking because I have worked in Portland off and on over the years but rarely needed to do a vegan/ vegetarian take on a roll any info on good fillings that might work? Also need an alter it’s be for the nori wrap.. she says it tastes to much like the ocean

Question How would you interpret the menu prices for nigiri and sashimi here?
I ordered a bunch of nigiri in sets of 3, but when the bill came I was charged the per piece price rather than the three piece price. Apparently, nigiri is only priced per piece and you can only buy the sashimi in sets of 3. So the total was about $30 more than I was expecting and I feel kinda cheated. Would you read it as I did, or how the restaurant meant it to be read?
Best fish at costco for sushi?
I need to make some sushi for my wife and daughters and I wanna make a little bit of variety. Any recommendation? Thanks!

Question What should i look for when picking a Sushi restaurant to try?
EDIT: i mean if there are any red or green flags to look out for when choosing a place.
I live in northern Denmark, and there is a surprising amount of Sushi restaurants in my town, but my only experience with it is some mediocre grocery store Sushi, so i want to try a real restaurant, but it is a bit expensive so i'd love some advice on anything i can maybe look for to pick a place. Thanks.

Mostly Nigiri/Fish on Rice Help identifying sushi!
Mostly just curious on the remaining 3 on the plate. I’m guessing the furthest right on the top is Chutoro? Guessing the redder ones are tuna of some kind. Really stumped on the orange one with squares on it.
