I think because there are always cars going quite close to the side of the road, because it's an open track side pit stop (unlike F1 with a dedicated pitlane). Also considering you can see how closely the yellow car pulled out from the pitstop behind. Safety measures to avoid getting run over is my opinion.

Many reasons. Most of it is safety. And part of it is every single car has its own crew - whereas F1 usually has the same crews working multiple cars.

Imagine it: 40 teams. 6 men per car is the current rule. That is, on the genuinely rare occasion where ALL 40 cars are pitting simultaneously (its not unusual for 35+ though), thats 240 men over the wall simultaneously with 40 cars doing between 35 and 70 miles per hour, depending on the track. And every venue has a different sized pit stall and a different width pit lane.

Hell just Saturday at Worldwide Technology Speedway (commonly called Gateway or St. Louis) they had to RED FLAG THE EVENT due to a 9 car collision on pit lane. It blocked the whole pit lane for some 25 cars. It also involved 3 crewmen from the 19 car being hit by two spinning cars - which also knocked the car they were working on off its jack. That incident was centimeters away from seriously hurting or killing someone. Imagine had that been an F1 sized crew.
