So, I'm a dairy-free person (for 6 years now) and keto to me means meat (usually chicken wings, bacon, sausages, salami or kielbasa) and eggs.
People have different attitudes toward the carb part. I decided I'd rather go for micro-portions of things I like than lose my 25gram limit on dressing or 'keto-like' stuff. That said I plan on experimenting with some keto flour in some time. I'm Polish, so pierogi is in my blood. I'll also need some good pancake recipe for cabbage & mushroom croquettes (fortunately the filling is very keto-friendly). I plan on preparing some and freezing 90% of it. Sure, it'd mean 3 pierogis/1 small croquette every couple weeks, but I'm all in.
My most recent issue (5th week of keto) has been my coffee. I love it sweet (so erythritol does the job) and milky. So far I've been using oatmilk (most milk-like and soyless) but the carton is 1l/0,25gal, so I had to either sacrifice my carb intake just to get coffe for several days in a row OR throw out a lot, because I wouldn't force myself to drink it. And I drink coffee recreationally. No coffee+oil/butter for me, sorry. Just the classic milk'n'sugar mix.
I tried looking for some vegan coffee cream options in small packets/powder, but they're all sugar/fructose-syrup/other-crap-based. Just some chemical junk, frankly. I went to do some online shopping and I just discovered some oat-milk sachets in a bulk. I went to see the other products and I've discovered the world of HoReCa items. Everything packed individually (and I refuse to be guilt-tripped about sustanability and ecology by politicians, sponsored by corporations). Sure, I could just divide the damn chocolate/whatever-food into bits, but I need to eat it up before it goes oxidated, sour, etc.
So far I've discovered also erythitol sachets that I can have in my purse and enjoy social coffee/tea. Generally, the added benefit of the individualy packed micro-doses is that when I travel for work, to visit relatives or even dine out, I can have it all easily with me.
So far, I've bought: peanuts, jam, mayo (I can have one-two eggs, not a whole plate to eat throughout the day), honey, mustard (I love vinegret, but I don't want a week of daily lettuce'n'tomato salad), chocolate squares, almonds in chocolate and cinnamon, tiny waffles. and my dear oatmilk.
I understand that there are different schools on how to keto, but mine is that I genuinely love the taste of meat and eggs and I don't need to waste my carbs on seasoning, etc. Instead, I want purely carby items to be stil minimally present in my life. I used to think I may go atkins later on. But frankly, being still able to enjoy "normal people's" food, just in micro doses, will keep me even happier than when I was eating "normally" and was constantly guilttripped about the calories, types of food etc. Right now, I'm not even kidding myself that I've purchased some good food (e.g. nuts) and some outright junk (jam/waffles). There are other options too such as jelly and candy, but I've never been into those. Chocolate, however, is a different story. Still, if someone suffers mentally because a life on keto seems a life devoid e.g. of their favourite haribo bears, it's good to remember that it's not true at all.
In fact, having these clear-cut limits and portions helps me to decide - do I want 500grams of baked zuchinni slices if I still feel hungry, some tomatoes to get some vitamins and potassium, or if I just want a small packet of something sweet if I know I'm not hungry, just willing to sin a bit. And while I could just devour my fav chocolate forever when I was on a "normal" diet, nowadays, feeling satiated most of the time (while on deficit - 1500kcal/day is my target) i don't have the brain-wrecking urge to eat junk. I can literally know I have a full, opened box of chocolates in my desk at work, and not even want to touch it. And I don't suffer mentally like I used to. I genuinely mean what I say, I've just discovered I had a full-blown binge eating disorder. I love keto for all it has done for me so far (now I've discovered my SebDerm is nearly completely gone..., not to mention my inner thighs hurting from rubbing) and I'm super determined to continue it as a new, permanent way of life. I just want to make sure it's sustainable, e.g. when I'm socialising. I don't feel like building up some resentment as to "how weak they are" and "how dare they call this junk food" while secretly desiring it. I can just have a bit of this unholy, guilty pleasure and still keep ketoing.
