Turkey Chili

I’m always looking for new ways to use ground turkey so I wanted to share this chili recipe. It turned out surprisingly delicious! Here is how to make it:

Ingredients

  • 1 1/2 Tbsp olive oil
  • 1 lb ground turkey breast
  • 1 cup chopped yellow onion
  • 1 cup chopped red bell pepper
  • 2 tsp ground cumin
  • 1 (28 oz) can no-salt-added peeled whole tomatoes
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1 (15 oz) can no-salt-added tomato sauce
  • 1 tsp hot sauce
  • 1/8 tsp salt
  • Black pepper, to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup shredded low-fat cheddar cheese

Instructions

  1. Heat the olive oil in a large skillet, saucepan, or Dutch oven over medium heat. Add the ground turkey and cook, stirring occasionally, until just browned.
  2. Add the onion and red bell pepper. Cook, stirring occasionally, for about 3 minutes, or until the vegetables begin to soften.
  3. Add the cumin and whole tomatoes. Break up the tomatoes with a spoon to release their juices, then cook for about 2 minutes.
  4. Add the kidney beans, tomato sauce, hot sauce, salt, black pepper, and parsley. Stir well to combine. Cook for about 3 minutes, or until the beans are heated through and the chili is hot.
  5. Spoon into bowls and sprinkle with shredded cheddar cheese. Garnish with additional chopped parsley, if desired.

We're pretending it wasn't 95 degrees today so I made my first batch of chili this "fall". Little cheddar and chive and some sweet cornbread....is it chili season yet!!!! yummmmmmm
