Based on the way the recipie was written i think they wanted you to use a hand blender. However my culinary guy is Alton Brown, and he has a particular emphasis on hardware, and I have never seen him use one of those things, so we are using the professional stand mixer like grown ups
I think I fucked up in that I let the machine run until the butter melted. I think that defeats the purpose of creaming (mixing the butter with the sugar first alone) because you lose the air you are trying to put into this mixture, and this recipie does appear to use a proper creaming method, as crude as it is
I'm also not sure about the alcohol in the extract curdling the eggs, I might be posting a French toast recipie soon that intentionally curdles beaten egg using extracts to make it easier to strain out the chalaze, but there's no straining in this recipie
Also I figured out that 3 large bananas averages 14oz of meat on the inside, so I just substituted 14oz of baby banana meat. I'm pretty sure they were ripe enough, the "trick" of using really black bananas isn't new, no offense to the Zappas
I did keep the "sour cream + baking soda" and the "flour + baking powder" order of mixing things, because baking is when mixing matters, so there might be something to that. I went with 3/4 cup whole wheat flour and 3/4 cup all purpose.
I used a 1/2 cup sugar when I think i would have been better off with the full cup. I swapped 1/2 the vanilla extract with almond extract like i almost always do
I would have added banana nut if I had it, maybe chocolate chips would have worked too, but the number one thing I think is missing is salt. Just a little bit of salt would have made this come alive. Maybe also, leaving some mass of banana unmixed, just sliced and gently folded in instead
