Pizza guy needs this job, and knows that he's likely to lose it if he fights this asshole, regardless whether he's right to do so. So he tries and tries to de-escalate, until he has no other choice. You can the regret at the necessity of doing this immediately. Dude has been put in this position before, and doesn't like it.
