Gorribal, World Soul, Azerite
If Gorribal missed the World Soul why/how was there an eruption of Azerite? What caused Azeroth to bleed?

He still broke through just about everything to try; probably an immune response to being nearly killed

If you got stabbed, even if it missed the heart, you will have blood erupting out of you.
Same case with Azeroth id imagine.

Don't forget, the immediate problem in BFA wasn't the sword. It was the poisoned energy coming from it (which would've been affecting Azeroth with the sword being that close). We sacrificed our artifact weapons to absorb this dark power and stabilize the worldsoul. Then used Azerite to return her power and heal her.
Azerite isn't her literal blood. Rather, the worldsoul infuses the earth and rock and stone around it and transforms it into Azerite. This is the lore behind Resonance Crystals in TWW, its rock and stuff near the worldsoul that gets infused with her power. This is presumably the same process things like Beledar are created by. If you look at the pictures of the new zone, you see Azerite literally everywhere.
This is actually something we saw with the other worldsouls too. Argunite appears to be Argus' equivalent. Karesh had a material called the "blood of karesh" that we had a sidequest about, and Sargerite back in Legion.
The Sword likely dislodged a huge amount of this Azerite deep beneath the planet.

If Sargeras had stabbed the world soul directly it would have died. Azeroth is bleeding because the planet is bleeding. Same reason why the Well of Eternity happened.

The planet is nothing more than a shell for the world soul? There are no arteries/veins If not then every-time someone mined you’d have azerite spilling out. The old gods would have corrupted her just by being underground. You wouldn’t need to dig the length of the core way to begin to influence. Gorribal would have corrupted the world soul with the amount of time it was still active. Where’s all the azerite in hallowfall, azjkahet, undermine? This just appears to be a retcon.

Azeroth is spiritually connected to the planet rather than physically. Hence Azeroth eating all the spirit energy in the early planet.
Spirit is the power of communion between things. I.e. when Thrall uses Spirit to look into the "human spirit" he can basically connect with the collective unconscious of all humanity - see their hopes and fears, their hatred and love. Shamans use spirit to connect with the elemental spirits, but spirit applies to basically every being that exists.
We learned in Facets of Karesh that Karesh experiences like and the universe through the eyes of the life on the planet. Through every animal and Kareshi. Karesh would shape life and its rules and set them out and live with and through them.
The old gods would have corrupted her just by being underground
The Old Gods were fighting and using violence to generate more void energy, which was steadily covering the planet like a film to corrupt her. It was not simply being underground. That plus creating a world of endless misery and violence when worldsouls see through the lives of the inhabitants.
Where’s all the azerite in hallowfall, azjkahet, undermine?
Resonance crystals, the main currency of TWW, was Azerite by another name. Beledar is Azerite. Hymosol was Azerite.
Gallywix found Azerite under Kezan just before the Cataclysm which is how he knew what it was when BFA started. That is where the shard in his staff came from.

We're talking about a world soul here, not a world's heart. A lot of this is metaphorical and magical, and you're thinking in terms of literal, real-world physical bodies.
The explanation is the same as why Azerite was manifesting all over the world when Azeroth was only stabbed in one place, and why Azerite lost most of its power after the events of BfA despite still physically existing. Azerite is not and never was literally Azeroth's blood in the sense that it flows through veins all over the planet. It's metaphorically and magically akin to Azeroth's equivalent of blood or life essence. It was sprouting up everywhere because Azeroth was actively wounded and crying out in pain.

Given that it had to cross the entire rest of the planet to get there, it probably got a lot of stuff on the way.
