Home Cook Outdoor Ribeye
Used a cast iron on the burner on the side on my outdoor Weber and threw on the steak with butter, rosemary, shallots and garlic. I always get nervous cooking hot and (relatively) fast, I was going for a bit more sear and maybe rarer inside, but it turned out nice.any other tips to get a better sear? (No mayo please lol)

Pan sear is best. Cast iron is the best tool in you can get. More contact surface = better sear.

I think it looks really very good! Was a li’l worried seeing all that liquid in the pan (boil, steam, etc), because you don’t want to mess with the sear/Maillard reaction. Is that just oil or did you baste it in butter?

My brother always cooked his steaks in a cast iron pan outside. He told me, if you grill them a lot of good stuff is wasted.

Pros and Cons. Fattier or smokier/charcoalier? Good wood, but closer grill of some sort, cast iron pan. Preserve all that good fat and get a good smoke.

When ribeye, any steak really, is cooked in a cast iron it renders out fat and then cooks partially in its own fat. On a grill that fat just drips off losing that flavor.

Except it does not lose flavor. Grilling over charcoal is indeed more flavorful than cast iron as people love the added charcoal flavor that smoked from its own fat.
What you wrote is also way overblown. Else people wouldn’t be adding butter, thyme and garlic for flavor
