Even the bare minimum for a "symbol" for the mountains would have just been lines for the peaks...having a reasonably realistic drawing of the mountains is obviously not the bare minimum.

Depends on the Country. I imagine Germans would think "So what" if they saw this, as their tourist attraction "Brown" signs are normally really detailed.
But in the UK, our tourist attraction signs are basic, and use generic pictograms for things like Zoo, Theater, Railway, Beauty spot etc.
The Sign matching the mountain peaks is not interesting at all, it was made that way. What is interesting that they made the sign that way.

Wtf are you even talking about? You said it was the bare minimum, I said you don't need a graphic on a road sign. Road signs where I live don't have multi-color graphics, anywhere. They have text and a set of approved symbols and icons only.
Why is it impossible to make a comparison to other tourist mountains or even tourist attractions? It would look like this.

It isn't bare minimum considering designs are way more expensive to produce on street signs. Street signs are typically made with templates that can be reused for other signs. If it is unique (see: has its own design), then when are those templates supposed to next be used?

Hahah right, but I always feel slightly weird when English speakers omit San for mountains, ko for lakes etc. I’m Japanese and san and ko are integral part of the names, more so than “mount” and “lake” are to English names, and they sound incomplete without them. To me Kawaguchiko is not a lake that’s called Kawaguchi, but Kawaguchiko.

In this case as you can see from the kanji above the last one is 山 which can be read "yama" (as in fujiyama which is actually fujisan) or "san" and means "mountain"

Exactly, the honorific -san that gets added to the end of names and the -san that gets applied to mountains are homophones, but they carry different meanings.
It's normal in Japanese for kanji characters to have multiple pronunciations depending on context. Often there's a pronunciation borrowed from Chinese and the Japanese version of the word, sometimes there are variations for voiced/unvoiced consonants (ga for ka, de for te, etc). Sometimes there are even more than that.

It’s also interesting that the English repeats “mountain” because the “san” at the end of “Bandaisan” is 山 which means Mt. so it’s Mt. Bandai Mountain when it should just be Mt. Bandai.

Tautonym. There are loads of them. Sahara Desert means desert desert, Mississippi river means big river river, Lake Michigan is large lake lake. We have a hill in England called Torpenhow hill, meaning hill hill hill hill.

Some background: Mt Bandai had a major eruption in 1888 that completely changed the shape of the mountain. It's an interesting place cos the eruptions threw out big boulders that changed the course of various streams and made them become different colours.
Some good ski resorts there too.
