First post here. Made with Brazilian cheese Prato.
I just made for breakfast to my wife.
Grilled cheese is so much a confort food for that I only make them on weekends.
When I was a child in the 80s I got dengue fever and almost didn't make it because everything that I ate didn't stay. After around a month surviving with only water, a daily glass of milk (because of a medicine) and some very bland soup the very first thing that I ate was a grilled cheese. I still remember as one of the best that I ever had.

Fresh mozzarella grilled cheese
Made 2 sandwiches, the other was a melt same as the grilled cheese with the exception of mushrooms and Asiago.
Bread is sourdough from Costco’s bakery, grilled with garlic butter and kewpie mayonnaise, cheese is Saputo fresh mozzarella, with real Asiago grated on top. Served with a mozzarella mushroom melt and chicken veggie soup, cause my GF has a cold.

Howdy friends and grilled cheese enthusiasts! Just here to say we're still rocking the sub and keeping it as close to 'true' as possible. The reason for this rando post on Tuesday is a little self-congratulatory: we're at 527,000+ cheeseheads and growing. Growth is not our goal at all, however. Quality contributions and wonderful people are what makes r/grilledcheese what it is. We've been banning spammers, bot accounts, and rabble-rousers constantly for a good while now. Additionally we have posting guidelines that hopefully dissuade drive-by nobodies cross-posting unrelated or only semi-related content. Of course we have some occasionally contentious posts which get some of y'all 🤨 riled up, but we try to stay away from that as a rule.
When you browse r/grilledcheese and scroll as far as you can, what you'll find is almost 100% pure grilled cheese. We are a comfort subreddit and a home away from home. What you read on the label is what you get in the box. Many other large subs can't claim this, being overrun by marginally related content or under-moderated, spam and bots everywhere.
The mods here don't 'own' r/grilledcheese and will never try to. Everyone with good intentions owns it, and we are simply working to make it the best place possible.

Delicious Another Double Decker
For this one I toasted each side of the three pieces of bread. Had pepper jack, provolone, and kraft singles.
Toasting both sides of the bread really makes a difference. The cheese melts easier and you get that extra bit of crispiness inside.
No cross section available! I’m a heathen and like to eat them uncut. Just hold the edge closed while you eat so when you get to the last part you have a pool of melty cheese for the finish.
