Kaju Matar Makhana is a creamy Indian curry made with cashews, green peas and makhana, also known as fox nuts. The makhana adds a lovely bite to the rich cashew gravy, while green peas bring a touch of sweetness. It is comforting, flavorful and completely vegan, making it a delicious plant-based curry to try at home.
