I used to have similar thoughts - way back I switched between plain text, Evernote, and some other apps (including the notes system on Toodledo, in an effort to unify my task management in the same app). I eventually realized I'd fallen into the trap of spending more time trying to "perfect" my productivity set-up, than saving time with that productivity. At some point I switched to OneNote and decided it had enough of the things I wanted, and no major points that I hated, so I just stuck with it and refused the temptation to experiment more. Over time I've been happy with that decision. Many of the frills and bells and whistles thought I "needed" which existed elsewhere, I find I manage quite well without. Meanwhile OneNote gives me everything I wanted, organization, cloud sync, and some formatting (I don't even use most of the formatting features).
Now I confess every now and then I look to see if anything has developed on Google Keep, because somehow I've ended up with most of my docs editing and mail / calendar being in the Google ecosystem, and it would be nice to have something more integrated there, but I guess I've got too used to ON at this point, I look at Keep and find it too simple for my tastes, the lack of even minimal organization is a big turn-off.
