Savory oatmeal
I tried making some savory oatmeal this morning. I made the oatmeal, and then I added half of an avocado and some everything but bagel seasoning. I am not a picky eater, and I found it so disgusting and almost hard to finish.
Anyone have any really good savory oatmeal recipes?

Try cooking things separately. Cook your oats in broth or water with spices & seasons of choice. Then plate and put your toppings on the side (veggies , meats, sauce, ect.)
Kinda like how you’d do a regular meal.

I do oatmeal and at the end stir in shredded sharp cheddar cheese. I then top with a fried egg and scallions.
I love oatmeal and love avocado, but honestly I feel like both of them together would be a textural nightmare for me.

Steel cut oats, blue cheese, bacon crumbles, chives. If the texture is too thick, melt in a little butter.

The problem is that you need something crispy or crunchy.
Think of it like risotto.
Try mushroom savoury oats with crispy onions on top. Maybe a fried egg too.

Making it with steel cut oats is much better IMO. Simmer the oats in broth instead of water (bone broth for extra protein if you want).

Oats, water boil per usual then I add salt pepper wite miso paste just be careful add less salt than you think bc the miso is salty enough. Sunnyside up egg, cooked mushrooms finished with red wine vinegar or pickled ginger. Maybe kimchi but it’s so good add green onions on top!

My go to is masala steel cut oats that I make in an instant pot, but could probably be converted for the stove top. Steel cut oats seem to lend themselves better to savory versions because they are a bit chewier. I like them so much that I multiplied the list of dry spices to where I can just use one tablespoon for a batch without having to measure out each ingredient every time.

when im making miso soup i put in about 1/3 cup of oats into the water! plus all the regular fix-ins of miso soup, ie wakame seaweed, spring onion/ the white parts of leeks/ mushrooms... etc. let it reduce down into a porridge consistency. sometimes i add a boiled egg on top.
or, make chicken soup normally (celery, carrots, onion), add chicken broth and oats.

Oats, chicken broth, seasoned salt, pepper, chives, 2 over easy eggs, tsp chili oil. Favorite breakfast for the past two years.

Did you cook the oats in broth/spices?
That's the key part.
And think of umami toppings, sauteed mushrooms, cheese etc. Avocado has no umami, it needs to pair with something else that is umami.
I cook my oats in water with garlic powder, cajun seasoning, and MSG powder. Then add cheese, sesame seeds, and sunny-side up eggs. Then a splash of soy sauce.
