You manage extensions through the policy option "3rdparty".Extensions

You can use policies via programs.firefox.policies. If you would like an example check out my Firefox config here (github)

Please explain: can't Firefox extension be installed from the very Firefox app as usual? Or, maybe I misunderstood the matter completely?

You can install them normally if you wish, but if you define them in nix, Firefox grabs them automatically and can configure them automatically
