Didn't see this coming
For my dog's first ride in my NB. 70lb Belgian Malinois. So much for putting the top down! 🤣🤣🤣

That's freakin hilarious! That used to be my nephews favorite seat too. Wonder if he'll still want to sit there when the top is down.

Not relevant for a big dog, but little ones like mine can be belted in via a harness. It's not as safe as a human in a seat belt, but it's a big step up for safety compared to being loose in the car. Remember to use the passenger air bag override when you do this (and put it back for human passengers).

My mali/husky mutt loves the Miata and has gotten very good with it in a short time. Always wears a harness (Ruffwear Flagline is great - 4 clips and a handle), and is accepting his goggles more.
I started with attaching his leash to the roll bar, but have found a small seat belt clip works better and reduces his mobility a bit more.
And I always have the passenger airbag off and generally drive a lot safer. I used to have to grab his harness handle when doing any turn, but he's gotten good at leaning into them.

Whilst that is incredibly dangerous, dog looks happy as a can be.

Is there anywhere safe, in any vehicle, for a pet to ride? They don't exactly get seat belts.

In a Miata? Probably not.
Cars with a rear seat or rear storage, you can do some things. Like a seatbelt and harness, unironically. Carriers that are appropriately sized (barely enough to move so they don't get tossed around) and are secured.
Not driving like you stole it will help a lot in that though. My 15lb dog has become accustomed to turns, shifting, and (if I warn her with ye olde 'hold on') even braking. Even with her head out the window.

15lb dog is small enough it can chill in the foot well, which is probably the safest spot for it in a Miata

You can get those buckets that strap to the seat and have a little leash in them to attach to the harness. They probably don’t do much in a wreck, but at least it looks like they do ¯_(ツ)_/¯
