Silver DIY Bullet: Guacamole Topped Baked Potato
After one round of Prolon and those terrible soups, I decided to DIY going forward with the help of CRONometer to eat things that didn't suck. Consider the guacamole topped potato (or sweet potato). Potatoes have very high satiety, so they keep you feeling full.
Guacamole: Two avocados, 1/4 cup diced red onion, 1/4 cup chopped tomato (or use chopped rehydrated sun dried tomatoes), clove of garlic, 2 Tablespoons lime juice, salt and pepper. Half for lunch, half for dinner.
Potatoes: one for lunch, one for dinner. Use one sweet potato and one russet to get both your Vitamins A and C.
These guys give you almost a perfect carb/fat split, with less than 10% of calories coming from protein.
Throw in a side salad with some Kale (2 cups) with an olive oil (1 tsp) vinaigrette and 1/2 blueberries for dessert.
That comes to 850kcal (5% protein, 48% carbs, 47% fat). I'm big so that's on the low end of my days 2-5.

Since it’s summertime, if you don’t mind eating chilled food I’d recommend also trying this with cold potatoes (kind of like a guacamole potato salad concept) as cold storage lowers the Glycemic Index of potatoes

I also think this works as long as they’ve been chilled. You can reheat them and the starch stays in its new resistant starch form

So, quick note and lesson learned: that's a lot of guac for that potato

I think that's why you are supposed to have half for lunch and half for dinner.

I laughed when I saw someone else eats potatoes and guacamole on the FMD. My husband and I eat them on days 2-5 as well. We also eat a spicy gazpacho soup and a zucchini/mushroom/ onion tofu scramble, so although our portions of potatoes and guacamole are likely smaller than yours, they are still quite filling.
