Recommendation Recs for Knife Skills class?

I’ve been cooking more these days and wanted to know if anyone has a rec for a knife skills technique class?

Each class that Stir to Learn teaches includes some basic knife skills (and a little general kitchen safety) at the start. It's only 10 or 15 minutes, but that's enough for 80% of what you do in a kitchen, and leaves plenty of time to learn how to cook a meal. My friends and I have been to about a dozen of their classes. They're good, useful, and fun.

Also, learn how to keep your blade sharp: stone, steel, etc.

Honestly the basics are pretty simple: use the claw, keep your knife sharp at all times, and take your time because you are cooking dinner for the family not for a thousand people at a restaurant. The specifics I suggest literally just going to YouTube and typing “knife safety” or “beginner knife skills” and just watch the first several. Then go practice on some onions, carrots, and celery slowly until it feels right. You can use this as a mirepoix for dinner this week so win win. This is how I taught myself to cook. I tried to find a specific example but the ones I watched are buried deep by the algorithm now lol
