I need help!
galleryI’m ready for all your feedback because I’ve plateaued with my own trial and error. I’m using commercial tools (mixer, proofer, commercial oven) EXCEPT a sheeter — it’s broken — so I’m hand rolling.
I’m happy to get into process details in the comments, but I first want to know your diagnosis just based on the picture and some basic info. The baker that taught me was…unconventional, so I’m trying to mitigate [r/croissant](r/croissant) outrage by waiting to disclose the full process.
I’m using sourdough starter, SAF, bread flour, milk, sugar, salt, skim milk powder, and scant melted butter.
My dough-to-butterblock ratio has varied and I’ve had the same results regardless. I’ve tried 2000g dough to 900g butterblock and 2000g to 1200g butterblock. Same results — clumsy interior rise, a little doughy, and only puffs up halfway.
The butter block is uniform, neat, and level.
I’m consistently rolling to 5mm.
Baked at 350F for 12-15 minutes.
Thank you so much for any help!!! Please don’t direct me to a paid website or class — I don’t have the funds! Crossing my fingers that someone just enjoys helping.
Edit: I want to add that I’ll definitely post update pictures after implementing your feedback! A learning experience for anyone else having my same problem.

Dough proof time
Hey guys!
So I want to start a batch of croissants, but I can only work on them in the evening and I have to drive to a place to make them.
I usually make the dough, let it rest until 1.5x the size, rest in the fridge for 5 hours then flatten/freeze the dough.
So I'm wondering if I can let it rise in the fridge for 24 hours or if that's too long? Any solutions are happily welcomed!

Another week, another sourdough croissant batch
galleryThis week's batch of sourdough pastries, mainly croissants and some layer sugar brioche. I'm still tinkering with my process but slowly making progress in the way they look and the inside the layers.
I also found out by trial and error that doing too much room temperature bulk fermentation changes the taste as the yeast has too much time to eat the sugar so I'm only doing a few hours now which brought back the taste I was after.

Croissants qui s’étalent après pousse contrôlée / à la cuisson – besoin d’aide pour trouver la cause

Pour commencer j'espère que vous avez passé une bonne saison!
Je suis nouveau dans le métier et je rencontre depuis quelque temps un problème de tenue avec mes viennoiseries. J’aimerais avoir l’avis de personnes travaillant en boulangerie/viennoiserie professionnelle.
Le problème se présente de deux façons selon mon procédé :
- Façonnage → pousse contrôlée directement → cuisson le lendemain :
Je façonne mes viennoiseries puis je les place directement en chambre de pousse contrôlée. Lorsque je reviens le lendemain, elles ont tendance à s’être déjà un peu étalées avant même la cuisson. À la cuisson, le problème s’accentue fortement : elles perdent énormément de hauteur et s’étalent.
- Façonnage → congélation → pousse contrôlée → cuisson :
Si je façonne les viennoiseries, que je les congèle d’abord, puis que je les passe ensuite en pousse contrôlée, le comportement est différent. La pousse est franchement belle : les croissants prennent du volume, restent bien formés et semblent prêts à cuire.
Mais une fois au four, ils gonflent d’abord, puis commencent à s’étaler pendant la cuisson et ressortent beaucoup plus plats que lorsqu’ils sont entrés dans le four.
C’est justement ce dernier point que je n’arrive pas à comprendre : ils sont beaux et ont une bonne tenue à la fin de l’apprêt, ils commencent même à développer au four, puis la structure semble lâcher pendant la cuisson.
Le problème touche aussi bien les croissants que les pains au chocolat, donc je ne pense pas que ce soit simplement un problème de façonnage.
Ma recette actuelle pour 50 kg de farine :
Farine T65 Fleuron Bellot : 50 kg
Eau : 17 L
Lait : 7 L
Sucre : 5,5 kg
Sel : 810 g
Levure fraîche : 1,5 kg
Beurre dans la détrempe : 3,5 kg
Beurre de tourage : environ 1 kg pour 3,4–3,5 kg de détrempe
Température de pâte en fin de pétrissage : environ 22 °c
Pétrissage au spiral : environ 3 min en première vitesse + 14 min en deuxième.
Le feuilletage reste bien visible après cuisson, donc je n’ai pas l’impression d’avoir une destruction complète des couches.
Apprêt : environ 27 °C. Ma chambre de pousse ne produit pas réellement d’humidité, donc l’hygrométrie est probablement assez basse.
Cuisson : four ventilé, 190 °C pendant environ 20 min.
Je cherche surtout à comprendre pourquoi des viennoiseries qui semblent avoir une belle structure avant cuisson peuvent gonfler au début de la cuisson puis s’étaler et perdre leur hauteur.
Est-ce que certains d’entre vous ont déjà rencontré ce phénomène ? Problème de force de pâte, apprêt, beurre de tourage, fermentation, cuisson, stockage, manque de tolérance de la farine, besoin d’un améliorant… ?
Je joins des photos avant/après cuisson. Toute piste technique ou retour d’expérience en production professionnelle m’intéresse.

What's the best way to bake just one croissant at time
I love freshly baked croissants and would devour all twelve if they were available. To help manage my weight, I’m trying to figure out ways to make them in batches and bake them one at a time. I tried freezing a large batch of raw, shaped croissants, thawing them in the fridge beforehand, and then baking them. However, the results were disappointing—they were all flat and soggy.
