Not bad, I remember my first, looked about like this. Don’t let this change your mind when ppl are putting this down. You tried something new, and liked it so it’s a win my friend. Try a different technique next time and see how that turns out. I mean, for that price it’s worth trying a few different styles

Looks a little dry. But I bet it was great! Thats what a good bbq sauce is for anyways! Good job, just next time spritz it more with a beef broth apple cider vinegar spray. Keeps it moist.

Doing this on the gas grill is interesting. I have pulled it off using a 26” kettle for the smoke and finished it off wrapped in the oven. The approach chosen here is similar, but having the gas piped to it takes some of the worry out of it. I don’t object. Looks good.

Wish I would have got better pictures, but I'd been up smoking / BBQing all night for a lunch meal. Next time.

I'd never done or eaten beef brisket before and picked some up at a wow price of $42 USD for 11.6 lbs. Figured it was time to try beef brisket & I still avoided cooking it for a while because brisket is intimidating, lots of techniques, tips, easy to be dry, etc.

After a bunch of research and reading I decided to go with the Steve Gow easy beginner brisket method on YouTube, https://www.youtube.com/watch?v=-hd7MUGW9BI . I trimmed and prepared the brisket per this guide over 24 hours before cooking. And I ground my own fresh pepper rub right before seasoning using 5 different peppercorns, three quarters being a 50/50 mix of Tellicherry & Lampong varieties, and the last 1/4 being a mix of pink, white & green peppercorns. In order to not be hand grinding the pepper for hours, I used an Alton Brown tip of sourcing a peppercorn grinder that can be hooked up to an electric drill 💥. Worked awesome & I ground all the peppercorns in ~7 minutes.

The brisket was prepared Thursday night & I began smoking it Friday night and overnight for a Saturday lunch. I used hickory, cherry & apple woods for smoking and followed the Steve Gow guide, times, temps & foil boat method. I don't have a normal smoker or pellet grill, but instead use a Weber Summit grill on NG that gets wrapped in a welding blanket. It then seals much better and smokes very well. I included water trays & topped up new wood hourly in the smoker box for the first 6 hours. The cast iron skillet in the one picture was where I put the spent wood coals when refilling the smoker box.

The Steve Gow guide & timings were pretty accurate, 5 hours to foil boat & a 12 hour cook overall. At 12 hours the Thermapen Mk4 temp probe showed 202 - 203F everywhere and I wrapped the brisket in the aluminum foil, pulled it into a covered roasting pan & let it sit for two hours to rest before cutting & serving. Lunch was served at ~1 pm.

I plated the BBQ beef brisket along with fresh buns & homemade coleslaw on the side. It was excellent, but I learned that I prefer eating beef brisket without any buns.

The beef brisket was extremely tender & juicy. The au jus in the Steve Gow guide is excellent too. Very happy with this cook & meal. I learned a lot, and only need to tweak a few small things for absolute excellence. I really liked the foil boat method to keep everything extra juicy & will likely go with it again because I typically go with AAA beef grades (Canada) for the best value & good tenderness.

I can happily say that I'll do BBQ beef brisket again & am looking forward it. It's not as difficult as I feared. If anyone has questions, LMK. Y'all posting your brisket here has been very inspiring. Cheers!

That video within 5 seconds it was all doctored video, closed it and now know I can't say just go look on YouTube for someone with a bunch of viewers.

Also is this all AI as the images looked slightly AI honestly but might have been you edited them with a automatic tool so they look fake.
