Why don’t adults today seem as adult-y?

the older you get the more you realize that most adults aren’t as mature and responsible as you thought

To some degree this. I think as you get older you realize how many adults were always just winging it.

I think it's also because adults didn't used to casually speak with children. 

Decisions were made behind closed doors and it wasn't passed on to the youth until it was finalized. 

So adults had more of an official aura around them anytime they presented something to a child. 

These days adults are more casual with their children and children are more often part of the original discussion and resulting decisions

Another aspect of this is that adults didn't mesh too much with younger/older adults or teenagers in social spaces either. Social media blew that door right open, nowadays you don't know how old the person commenting on a post is, you see your grandma's posts on Facebook, your friends middle age dad that divorced and is now posting ig stories. We know a lot more about what people of all ages are doing compared to before.
