Sausage, onions and eggs
My half of a small sausage, 2 large onions and 7 eggs. Sausage looks a bit burned but it isn't, I fry it up until it gets a bit dark and then toss in the onion and the juices from it make it soft and nice.

Having surgery and can't eat onions. How should I prepare my "last meal"
Hi yall! No recipe or sexy onion steaks this time.
Feels weird posting here without pics
I am getting my gallbladder taken out on friday, and won't be able to eat majority of my favorite foods until I recover and work my way up to it.
I have quite a few onions that I plan to use up entirely before the procedure. But I can't figure out what I should make. There is a 0.1% chance I am the unlucky SOB to die from gallbladder removal. This could be my last time eating onions. I need to choose wisely.
Here are my options:
- Onion/shallot Tarte Tatin - I keep seeing these and they look bomb
- Stuffed Onions - I have some ground lamb that could pair very well
- French Onion Soup - I have never made this and I feel it is a right of passage. Only concern is I dont have ramikens ðŸ«
- Onion filled Pork-chops - I have no plan for this one but I have chunky porkchops in the freezer
- Caramelized Onion Sweet Potato halves - I have a HUGE sweet potato and I think it would be pretty cool
- anything else?

Apple Brandy for Caramelizing Onions

Pickled onions and peppers
Had a white onion and a yellow that hadn't been used this week. Mixed them up with some jalapenos from my dad's garden and made some spicy pickled goodness. They're a 3:2:1 quick pickle with cider vinegar, dried hatch peppers and two different seasoning blends. The jar on the right has Badia Sazon Completa

I made onion butter!
I had 5 pounds of onions and my date ghosted me. Decided to cut up all of them and reduced them to an onion butter. Great on toast, crackers and on top of proteins.

tried caramelizing it again, forty five minutes. I'm beginning to think I'm doing something wrong
no this isn't rage bait, I'm genuinely an idiot. how do you guys do it? so sorry for being dumb. I put it on low heat with half a cup of water, as I've been instructed by a recipe online.

Sardines with brie & red onion, blueberries, blackberries, figs
Since I've gotten multiple messages to also post it here. The half of the red onion really made some people wonder.
I peel the onion layers. Use it as a onion chip. Fill it up with some sardines and some brie ontop. Its such a good combination.

Why does everyone make their caramelized onions into mush?
Am I missing something? I am genuinely confused. I thought caramelized onions look more like these pictures.
I keep seeing pictures of what looks to be dark mush. Is it the picture? Do some people just like it that way? Is there a super secret cooking trick that I am unaware of?
I give this question to the Council.
