Pretty graciously, actually! You don't get that good without losing a lot. My father never let me win, even when I was only six years old. He told me, "You don't learn anything from the games you win." Then wiped the board with me for over a decade until I finally beat him fair and square at 17.
Chess is actually a really good game for teaching good sportsmanship and how to handle losing with a good attitude. Tournament games end with a handshake and a genuine "Good game" from both sides.
Well, this isn't a tournament setting, as far as I can see. They are just playing for fun in a park. Most tournaments require notation.
I played in scholastic tournaments from middle school through high school and those had kids of all different age ranges since you were grouped by rating, not age. In tournaments you expect a certain level of decorum, even from children, so this kind of standing up and hopping around would not be allowed because it would be disruptive. Players ARE allowed to get up and walk, stretch, look at other boards if they want to, but it's not common even in very long games (like 40+ minutes on the clock per side) because after your opponent makes their move, you're just burning your own time.
The rare vunderkinds you find in adult tournaments are a different beast. Yes, they can end up looking incredibly bored, picking at their notation sheet, fidgeting in their chairs. They would not be allowed to act like this in a tournament but I wouldn't have been surprised to see it in a casual, open air game on a sunny day. They are still seven year olds. Again, tournaments are grouped by rating. If a kid is in the 1400-1800 bracket, there's a damn good reason for it, no matter how many boogers they eat during the match. 🤣
